Hi Friends!  We made it Wednesday :-)
So last night, I ventured outside my comfort zone and decided to try out another cardio class at my gym, besides Zumba.
where-the-magic-happensMagic Indeed.  I looked at the schedule, and found that Body Combat would be the best fit for my night.  Les Mills Body pump is actually one of my favorite strength training workouts so I was really excited to try out this workout of theirs.  When I got to the gym to sign up for class, I found that it had been replaced with Turbo Kick and that Body Combat was being offered on Wednesdays instead.  I debated on whether or not I should sign up for Turbo kick or just do some cardio and weights on my own.  Since I was already there and had left my headphones at home, I decided to just take the class.
As I walked through the door, the teacher grabbed my attendance slip and said, “grab a set of lights.”  I had assumed she meant light weights.  Oh no.  I completely heard her correctly.  Lights.  Finger lights to be exact.
As soon as I put these lights on my fingers, I knew I was in for a real treat :-) She welcomed everyone to class and told us what to expect.  Since it was a newer class, she told us that she wouldn’t be adding in any “turbo drills”.  Something clicked in my head and I knew that this class was going to be like my Turbo Fire DVDs.  The teacher said that if we came to the Saturday class, we could expect some turbo drills by them ;-)
She turned the lights off and we used what light came in through the windows from the gym and our fun finger lights.  The class was AWESOME!  A lot of the moves/combinations were similar to what I had done with Turbo Fire, so I wasn’t completely lost, but if you are new to this class, I suggest moving up to the front in order to see better.  When I did manage to get completely lost, I just kept moving-jumping, doing kicks and punches etc.  The music kept me going and kept my energy way up.  After 45 minutes of some serious cardio, we ended with a cool down and an amazing core session.  My stomach hurts today-in a good way of course :-)  If your gym offers a turbo kick class, I highly recommend trying it out.
Turbo Eats!
Tonight was a “let’s eat out” kind of night.  I’m proud to say that these are very rare in our house during the week.  I usually do a good job of meal planning & prep for the week.  If I don’t end up making dinner, hubs usually takes over.  But tonight we both threw in the towel.  I had to make a pit stop at target and scrounge up some things for Madelyn’s Halloween costume for school tomorrow.  We completely skipped the whole lets get dressed up for Halloween thing this year and I got a reminder at daycare on Tuesday that Thursday kids are allowed to wear costumes.  I couldn’t let her be the only kid at school without a costume, so I came up with kind of something.  Stay tuned for that.
So dinner.  I made a stop at Chipotle on my way back home because I heard rumors that they were now serving Sofritas (tofu) and I really wanted to try it.
Ahhh-mazing!  Seriously ate every single last bite of that bowl.  It has a little bit more of a kick to it than the chicken and is the most flavorful tofu I’ve ever had.  I had no idea tofu could taste like this.  I could see this becoming a regular choice for my burrito bowls :-)
Yum!  I’m off to catch up on some reading!  I hope everyone has a happy and safe Halloween!  Our neighborhood is doing trick-or-treat tomorrow, but I think we got exempt from it because we live on a semi-busy street with no sidewalks. We’ll find out tomorrow!  The little things you have to find out when moving into a new house :-)

{Kick} Me Baby One more Time

Happy Friday eve :-) Unfortunately, I don’t much of a weekend because of some military stuff, but I’m going to make the best of it.  I look forward to drills because it gives me time to catch up with people I only see once a month.

The mornings in WI have been really chilly.  This AM, when I went out to my car, the dashboard told me it was a crisp 28 degrees…definitely an oatmeal kind of morning.

I enjoyed some Gluten Freeda apple cinnamon oatmeal with a side of strawberries :-) Even though I do enjoy oatmeal, smoothie weather can come back any time now.

Today I decided to join a gym.  I’ve been without a gym membership for almost two years now.  Our apartment in Chicago had a fitness center and when I was working in Chicago I was a devoted Bar Method goer, so I couldn’t really justify the money for a gym membership.  When I started working Milwaukee, I worked out at our fitness center at work and went to a Zumba studio.  The fitness center at work doesn’t really have a whole lot and I missed getting a good quality/sweaty workout in.  Yesterday I tried out the YMCA and I decided that it wasn’t a great fit for me, even though I really like their family focus and with a little one on the way, that is somewhat important.  Today I worked out at another gym in the area and I found it to be a better fit.  This particular location I went to doesn’t have childcare, but one of the other gyms that is close to us does.  It feels good to be back at the gym and into somewhat of the old routine.

After my workout, I was left to fend for myself for dinner so I headed to an old favorite: Chipolte!  Did you know that they now offer brown rice?  Just one more reason to love them.

Last night I was reading one of my baby Apps and it told me that I was far enough along in my pregnancy that I would be able to hear the baby’s heartbeat with a stethoscope.  Lucky for me, my mom’s a nurse and she brought hers home to me.  I held it to my stomach and got nothing.  Later at night I decided to try it while I was laying down getting ready to go to sleep.  I still couldn’t hear the baby’s heartbeat but I heard something else:  KICKS!  I knew that’s what it was because at the same time I heard them through the stethoscope, I felt them in my stomach.  I held the stethoscope to my tummy and heard, “Thump!”  And I would press back on my stomach only to hear, “Thump! Thump!” The baby either enjoyed playing with me or was saying, “Knock it off mom, I’m trying to sleep!”  I could’ve had that baby kick me all night long just so I could’ve heard its little feet.  It was pretty amazing and made things even a little bit more real.  I still can’t believe there is still another human growing inside of me.  
We have our second ultrasound on Monday and I’m praying our little bundle of joy cooperates this time!  Last Monday did not go as well as we had hoped for.  I’m definitely going to make sure I eat something sugary right before I go in there and bring along some ice cold water.

Gluten-Free in Milwaukee

I’m so happy tomorrow is Monday…seriously not joking at all :-)  This past weekend we had drill and were getting stuff ready for future inspections so I ended up working 13 hours last night.  It wasn’t physically tiring, just a lot of waiting around for other people to be done so that I could finish my job.  I’m so happy that I get off Mondays.  This mama needs a little break.

My week in WI was filled with lots of good GF food.  On Tuesday, my mom and I went to the monthly gluten-free get together hosted by Sarah.  I think what Sarah has done with this group is pretty awesome.  Not only does it offer support and a chance to connect with other people who have to be gluten free (for a variety of reasons), but it also gives you a chance to discover new places and makes restaurants more aware of people with food allergies/sensitivities.  I’m looking forward to participating in more events. 

It was the 2nd anniversary of this group and it was held at Marty’s Pizza in Delafield, WI.  My parents love Marty’s and have ordered pizza from there before, but something about it this time around was so much better.  Maybe it was the pleasant company or the fact that we ate it there, but the pizza was mouthwatering.  My mom and I ordered the garden pizza and added some sausage.  We split a 10-inch and it was more than plenty.  Their gluten-free crust only comes in a 10 inch size.  She only had a few pieces, while prego here finished it off (my appetite has increased by a tenfold this second trimester).

On Thursday, hubs took the Amtrak in because he also had to be in Milwaukee for some military stuff.  I picked him up after zumba and we headed to Stack’d for dinner.  I’ve been here a few times before, twice I’ve had a burger.  The first time I ordered one that was premade on the menu.  The second time, I did a build your own burger and was not impressed.  It was kind of dry :-/ So when we went this time, I did away with the beef and ordered the portabella burger.  Next to peanut butter and jelly and peanut butter and chocolate, portabella mushroom and goat cheese is the next greatest combination.  I had not been in the greatest of moods when we got there, feeling kind of blah, and this burger (and just eating in general) cheered me right up.  It was a portabella mushroom stuffed with goat cheese and a balsamic soaked tomato served on a gf bun.  My stomach’s growling just thinking about it.  The burger came with french fries and then I went ahead and ordered garlic aioli for dipping because I’m not a fan of ketchup.  Stack’d makes their fries in a dedicated, gluten-free fryer.  BONUS!

On Saturday, I was really in the mood for some sushi, cooked of course.  That’s all I could think about all day.  After drill hubs and I were all set to go to dinner.  Well, 5 o’clock rolls around and there’s no sign of this exercise drill letting up and the sushi dreams were dwindling.  We were released around 8 p.m. and my last real meal had been around noon.  I was STARVING.  My boss made popcorn and let me have most of it.  Bless his heart :-) But there was no way that this appetite would have been satisfied with just sushi the last thing I felt like doing was getting dressed to go sit in a restaurant.  I had two things on my mind: food & sleep.

LC got released a little early, so I sent him a text telling him that sushi was out, Mexican take out was in.  We ordered from El Fuego, one of my favorite Milwaukee area Mexican restaurants who I found out recently started offering a gluten-free menu.  I ordered the steak taco meal.  3 fuego (fire) tacos with a side of beans and rice.  Demolished in a matter of 15 minutes.

I stopped myself after devouring the first taco to take a picture of my awesome meal.  I love El Fuego because it’s in a good area of Milwaukee, it’s pretty authentic tasting & the service is good and fast.  They also have an awesome patio for the summer time and delicious margaritas :-)

Hubs is actually on orders to work at the base in Milwaukee for a few weeks, so I’ve moved out of my parents for the week and we’re staying in a hotel closer to the base.  I was kind of bummed at first about this because it kind of puts a wrench in our little system we had going here (and it kills me to know that we’re still paying rent for an apartment we’ll barely be at this month), but Oliver’s staying with his Chicago grandparents and playing with their dogs, and I get to see my husband during the week after work so I shouldn’t complain, everyone’s happy.  The only thing is that we don’t have a hotel with a kitchenette, but thankfully my parents are just a short drive away and this just gives me a chance to check out what Milwaukee has to offer for gluten-free options.                

Take it and Bake It

I was a few bites into this meal before I snapped a picture. Pregnancy can make you pretty ravenous :-)

Take and bake Mexican food?  Heck yeah!  Last Thursday, I participated in my second Milwaukee gluten free get together hosted by the lovely Sarah.  The get together was held at Cocina DeLeon Gourmet on Bluemound Rd. in Brookfield, WI. 
It’s not a sit down restaurant, but the owner was able to set up tables and a buffet for us to enjoy a delicious meal.  This wasn’t the first time I’ve had their delicious food.  Last family Christmas, instead of making a big meal for our family, my mom bought pans upon pans of enchiladas.  I’ve tasted their chicken and their beef enchiladas and both were very good.  Their guacamole is  pretty tasty as well.

On Thursday, I decided to try their vegetarian enchiladas: black bean & spinach.  Oh. So. Good.  They were so good that I bought a pan of 6 to take back to Chicago with me and make for hubs.  Next to my grandma’s enchiladas, these are the next best thing.  Along with the pan of enchiladas I bought the enchilada sauce as well as cheese.

I made them for dinner that following Monday.  Since I had some errands to run and didn’t have time to whip up a nice meal, I thought this would be the perfect solution.  I baked the enchiladas according to the directions on the pan (overall they took about 25 minutes to make) and I made Spanish rice from scratch…without a recipe. Win! Hubs enjoyed the meal and said that I can buy those enchiladas again.  He didn’t even realize they were meatless.  I’d like to one day make my own enchiladas since I’ve never done it, but I will buying these again.  They’re perfect for quick meals or when you have to feed a lot of people.  The only thing that would’ve made this meal more authentic? A nice cold margarita on the rocks ;-) BUT that will have to wait awhile!
